Which page is rendered?

Only the first page. The result is a single flat PNG named for preview use. For every page as separate images, use the PDF-to-PNG pages tool instead.

What quality should I pick?

Screen (around 110 DPI) is fine for thumbnails and chat. Print (300 DPI) is sharper and makes a larger PNG.

Do links and text stay selectable?

No. The preview is a flat PNG picture of the first page. Use a text-extraction tool if you need the words.
